I find a very easy way to get shot of a load of eggs is to knock up a quiche.

However, Mr BM is getting a bit bored of quiche lorraine. What's your favourite quiche?

stilton with broccoli it has a little extra kick.
I'd rather use my eggs to make Spanish omelette (lots of veg in it) or frittata.
i make pancakes or omlettes (sp?) if ive a glut of eggs.

admittedly i don't much like quiche, i haven't made one for years, and find shop bought ones taste like cardboard, or an approximation... x
Victoria sponge
red onion, red pepper, and either salmon or prawns - with some chilli or chipotle in it.

watch out, BM, Ronnie will deem Quiche Ls unhealthy.......

3 eggs get delivered per day. I now have 38 of them..........

I make a victoria sandwich most weeks. We have scrambled eggs and omelette quite a bit.

Am quite liking salmon and broccoli/stilton and broccoli, trouble is Mr BM doesn't like broc. red onion and red pepper sounds nice.

Humbers, I've been working on it today. Subject to some finer points, I shall be able to publish soon!
Chop the broc up small and tell him it's something else :-)
Chicken and sweetcorn was a firm favourite with everyone when we kept our hens. X
smoked ham and mushroom or a spicy, chorizo and mixed sweet peppers.

With a glut of eggs I usually make a baked egg custard, meringues, souffles or mayonnaise. Made some pesto mayo the other day - it was lovely on a tomato salad
Cheese and leek with a touch of tarragon.

Frittata is also a good way of getting through eggs.
