Another egg using favourite was Ova Melita, found it in a really old egg recipe book that I picked up in a charity shop.
Its basically eggy bread, but you whip the eggs up with runny honey, then dip the bread in and fry it as usual, the kids used to love it with a slight sprinkle of sugar, X
Apparrently it was a Roman recipe. All those Roman soldiers must have gone to work on an egg, Ha. X
I'd cheerfully eat proper tortilla for breakfast, lunch and tea myself, hot or cold. Bit of a faff on the flip, granted, but I reckon you could easily use an extra two eggs a day per person from the daily output on one tortilla
