How To Make Chewy Cookies

I have tried to make chewy cookies but they are never chewy. Which ingredients make them chewy. I've used demerara sugar and golden syrup as per recipes but without success.

One thing is to cook them quickly so they don't dry out. The mixture has to be pretty soft.

I think you can just make them with a fairly soft mixture but cook for five minutes less so that they are very soft but almost done when taking out of oven so they will slightly firm up on cooling bu won't be crisp as most biscuits are on leaving .
