I've just made some paneer, but I've got about 2 pints of whey left. What can I used this for? Seems a shame to chuck it.

If you're still in the cheese making mood make some ricotta

Substitute it in any baking recipe that calls for water (or even milk)
Freeze it for later
Add it to homemade fruit smoothies or milkshakes
Feed it to the farm critters. chickens love it
Make ricotta
Pour it in your compost bin

BM, you can freeze it, feed it to the chickens or stick it on tomato plants

apparently body builders get through loads of the stuff
freeze it in icecubes so you can use it bit by bit, makes lovely light scones.

Thank you peeps. Didn't realise you could do so much with 2litres of milk and a lemon!

I *might* try ricotta, but if I run out of time, I'll freeze it (and give some to the chooks).

AND when I think how much Tescos charge for their paneer, I shall never buy it again.
bet it tastes a hell of a lot better too, Barmaid.
watch it if the chooks start bodybuilding though..
looks like you can also use it for fairly straightforward pickling too

May I have your recipe for paneer please? And what you would use it for. It sounds interesting.....

Angell - you use it in Indian cooking. Last night I did paneer and peas in a chilli sauce.

Dead simple. Boil up 2 litres of full fat milk. When it rises to the top of the pan, stir in 2 tbsps lemon juice, stir over a low heat until the curds separate. Drain through a clean muslin, rince through with cold water, then press into a slab. Mr BM was ever so impressed.
Barmaid, have you got a special gadget for the straining part?
How long does it take to strain, minutes, hours? I'd love to have a go at this. I'd like to make some sag paneer.

No I just use a clean muslin in a sieve and then use the handle of a wooden spoon to tie it up really tight so that all the water gets squeezed out.

It takes about 30 mins to strain and then about an hour to press.

Buy baby muslins from a large supermarket. I got a pack of 6 for £6.99, but you just boil them and use them again and again.
I wouldn't put it in my compost bins, milk based stuff will surely stink? I was horrified on a thrift programme the other day when people were told to pour milky tea dregs in their houseplants to save water!

How interesting...wonder if it works with goat's milk? I spend a fortune on that! Thanks Barmaid.
Pour it over the dogs food, they love it and it's really good for them!
