I need to make potato scones for someone with kidney problems. Potatoes have a high potassium content and so I need to double-boil potatoes to lower this and thus shop-bought scones are out of the picture (unfortunately). I have tried and tried but cannot get my scones anything like shop ones. This means the person I make them for, doesn't like them! (She also has learning difficulties). Can anyone help me please?

what doesn't she like about them?
I know eating potatoes every day means double boiling but can the occasional shop bought scone be very dangerous?
gness, it depends on what the kidney function is like. I had to be super careful with my late DH.
And me with a husband with no kidneys..extra careful at home but we could eat out. Anyone with kidney problems needing to be so careful will be having regular potassium checks. x
Excuse me for being thick, but what is double boiling?
To rid the potatoes of as much potassium as possible, Jeza I had to half boil them then discard that water and finish in fresh.
Thanks gness. Can you now tell me what problems potassium causes?
With us, they didn't want to start him on dialysis and he was down to less than half a kidney.
Woof, that doesn't answer my Q. Unless it is something to do with Kidney problems?
High potassium causes numerous problems for renal patients from slow pulse, tingling and burning sensations, sickness and weakness to heart failure. Our worst experience was in a pub in Cambridge when the hospital hadn't picked up on OH's high level that week. He became paralysed and I had to hoick him over my shoulder, put him in the car and whizz off to a hospital....seems he was lucky that it stopped his legs working because the levels he had usually stopped the heart...Nearly spoiled a Joan Baez concert. ;-) x
Jeza - think about what it is they use when they administer lethal injections in the US when they execute criminals - potassium. It stops the heart.
