Potassium In Potatoes

I was interested in the 'Potato scones' thread. I'd never heard of twice boiling potatoes, what exactly does this entail? Please forgive my ignorance but I'd like to know more about the effects, etc. TIA

gness i found huge lists online from the american USDA (food department) giving the potassium, calcium, protein, fibre, magnesium phosphorus, sugar, fat, the lot per portion (and portion size) of hundreds of foods....you make yourself an expert in no time flat don't you? I gave the hospital dieticians the link to the USDA website, they were amazed, had nothing like it.

sibs, it is not only high potassium foods that kidney patients have to avoid, but also foods high in phosphate
