Potassium In Potatoes

I was interested in the 'Potato scones' thread. I'd never heard of twice boiling potatoes, what exactly does this entail? Please forgive my ignorance but I'd like to know more about the effects, etc. TIA

Gness, it must have been very difficult. It was your answers that triggered my question and my mother who is on water tablets and eats potatoes is having kidney problems at the minute
Is she having blood checks Psyb...and potassium varies such a lot. OH usually had to work to keep his down but I remember once he had symptoms of it being too low so, while he waited for the blood results, he was told to sit by the phone with a banana....he did...the plonker! ;-) x
gness i found huge lists online from the american USDA (food department) giving the potassium, calcium, protein, fibre, magnesium phosphorus, sugar, fat, the lot per portion (and portion size) of hundreds of foods....you make yourself an expert in no time flat don't you? I gave the hospital dieticians the link to the USDA website, they were amazed, had nothing like it.
I would do it all again to have him back........
Expert indeed Woof....maybe that is why I don't cook now..I don't know. One thing that did surprise me was how little knowledge the hospital dieticians had and how useless they were at times. Or maybe I hit it unlucky with our hospital. x
We were lucky in that respect, our local renal hospital is a regional centre. They were brilliant there, and so kind.
sibs, it is not only high potassium foods that kidney patients have to avoid, but also foods high in phosphate
