I normally do stews in a big saucepan, but fancy a chicken casserole in oven.

How do you cook yours and what ingredients. Cheers abers.

How do I make a chicken casserole?

Put one very large chicken breast quarter (for one person, obviously) into a casserole dish.

Fumble around in the back of the kitchen cupboard for a tin/packet of soup that looks like it might go well with chicken. (Cream of chicken works well but it's rather too obvious a choice. Cream of mushroom is possibly better. Chicken and leek soup is really nice in a casserole. Mulligatawny is an unusual choice but it works well if a spicy result is required).

Find some vegetables that go well with the choice of soup (or rush down the Co-op to buy some). Mushrooms work well with most soup choices but possibly not with mulligatawny. (Red and green peppers might go well there). Leeks, or even celery, might be worth a try alongside the mushrooms.

Add chosen veg and soup to the casserole dish, possibly laying slices of potato on the top, and put it in a really low oven (Gas Mark 1 or 2) for several hours. (It makes little difference whether it's 3 hours or 6 hours; it still works!). The flesh will simply fall away from the bone, resulting in a superb casserole. (If you've put potato slices on top, there's possibly no need for any other accompaniments but broccoli or cauliflower go well with mushroom/leek bases, whereas carrots and mustard mash go well with a spicier base).

Using an oven to cook a casserole is an expensive option - hence, slow-cooker.

i have never had a slow cooker, but think its time that I treated myself to one.
i could leave it on all. Not a bad idea that.
We've just put some stewing beef in the slow casserole, very much on the principle of "a la Chris"....

With winter soon coming, stews casseroles are most welcome in this house.
It also saved all that quick cooking when dinna time arrives.
I want to get a slow cooker but feel it may be another of the things that get left in a cupboard and not be used.
Slow cookers are brilliant Pusskin. Inexpensive and saves on the gas bill. Stews etc taste much better

Get a slow cooker, you won't regret it. I use ours all the time even in summer for bolognaise, curry, chilli as well as casseroles. Also the Sunday joint goes in there too.

Ratty, Sunday joint too. Does that include roasting pots?
No I have to do those in the oven, but you could stick potatoes in if you don't have to have them roasted. The thing with a slow cooker is that any veg doesn't go soggy or break up no matter how long it's in for.
Slow cookers are great, but being retired (from a paid job anyway) we prefer the pressure cooker for speed and sheer economy. Always do a two day quantity as what's left over can be curried with chillies, haldi or turmeric, freshly ground cumin seeds and garam masala as the spices.
