Pork Roast Tips

Hi, I have a 1kg pork shoulder joint. Can anyone tell me how long I need to roast it for? Don't usually do a pork roast as usually get chops. Want to do crackling too if anyone has any good tips for that. Will be for tonight and tomorrow for tea.

Got some potatoes to roast too, little new potatoes as easier to carry so will be putting them in to roast too.

Not done a proper roast for ages :)

35 minutes per half kilo and 35 minutes more.

Make sure you dry the fat really well and rub some salt into the fat before you put it in the oven. Ideally, it should have dried out in the fridge for a day but you might get away with it.

Thank you :) The pork is in and I dried off the top and rubbed salt in and timer set for an hour and 45 mins.

Now to sort the potatoes ready.
Eve you probably know this but the "new" kind of potato (waxy) doesn't roast as well as the "old" kind (floury)

I know, had a bit of a moment in Aldi, too busy and too many people (queues up the aisles), town was silly busy in general, and just wanted to grab something quick and light and get out of there. Should have gone and got some loose potatoes as don't need many or a big bag but was too tired to get to a bigger store. Next time :)

Have had issues scoring the fat on the pork, I need a sharper knife!
a stanley knife is the thing to use, is there one in the house anywhere? Clean it very carefully first!!
for next time, after scoring pour boiling water over to open up then put salt over then put in fridge for a day

No, I managed to stab it a bit so not quite scored but close-ish! It looked lightly scored anyway.

Potatoes are now boiled and ready for sticking in later. Learnt my lesson as bigger potatoes would have been easier to peel too.

Just over an hour to go so can watch some Strictly, stick the potatoes in in about 15/20 mins then just need to do my peas and gravy later, will probably do them when I've taken the joint out, give it time to rest.
