Why doesn't my naan turn out like the kind we get in Indian restaurants. I've been trying all sorts of different recipes,but they are never quite right.

They are never as light and fluffy as I like. Have tried with yeast,without yeast,with yogurt,without yogurt,with and without eggsThey are all edible,but not quite right.Years ago I used to use a naan bread mix,but have tried all the major supermarkets with no success.
I do this one and it comes out sound..

They use a Tandoori oven.
I was wondering if the oven made a difference.
Maybe avoid the ready mixes and take a recipe from a well respected Indian cookbook.
I follow Madhur Jaffrey's recipe.

Light and fluffy every time.
make chipattis instead
