I've always assumed that it would be an exceptional dish, but it appears that they are just trying to get rid of something. Anyone else know this?

One other is never eat in a restaurant Monday night, maybe Tuesday. Chef is off and they use up the 'bits' from the w/end.

It depends - oft a money spinner for the restaurant to meet budget targets.
I didn't know for sure, Psybbo but I guessed it would be something like that.
...or, perhaps, made with ingredients that were particularly cheap from the suppliers?

I tend to go for the Chef's Specials because they are being cooked on the day. Other things on the menu might be stuff in the freezer which they then just microwave or stick in a deep fat fryer.

No Tilly, just caught something on TV 'Shop Secrets-Tricks of The Trade' and this was the suggestion. OH has just said that's why he never has it!
If its a cook chill restaurant, I don't think calling a dish the chef's special means anything.
Chefs specials are not necessarily cooked by the chef. They could still be bought in products that are popular and have a good GP (gross profit).
I would never eat a homemade vegetable curry in a restaurant because that is well & truly leftovers.

Well that's why they have soup of the day, hors d'oeuvre are also often Items that use up fresh food that require using up, but this does not make it bad food or lower quality, it really depends on the chefs skill, when you run a kitchen that uses fresh produce it only has a very limited shelf life, so if it's a good restaurant with a quality chef the you should be getting great value for money and good food if you eat the special. If its a poor restaurant then don't eat there period.
They're just claiming that their Chef is special. You should form your own opinion.
It's a bit like wine that's labelled "winemakers selection". Maybe they selected it as low grade stuff to be got rid of as quckly as possible!
