Have mixed my Christmas cake today but have run out of time for baking it as just about to go out for the evening. (Yes, I know I could put it in the oven on low gas for 4 hrs but don't want to risk it). Question is should I put the mixture in the fridge overnight, or just cover and leave it in a cool kitchen?

I left it out of the fridge and cooked it this morning. Smells and looks fine - will let you know in about 6 weeks what it tastes like!
That`s good. I googled it when I saw your question but couldn`t find anyone who had asked that question on the internet.
BTW - there is a forum on Delia Smith`s website which is quite good for asking questions. I got a useful answer about something on there.
