Making a cheese sauce is very quick and easy :-)
With a cheese sauce, I would always use a very mature and strong cheddar. If I have any cambazola or similar, then I add that for an extra kick. Don't forget to also add English mustard.
I'll ask bernie.

cheese sauce is dead easy to make, melt butter & add flour, stir together to make a roux, slowly add your milk until you get a white sauce, then add your cheese of choice. I like a mix of strong cheddar & emmental , plenty of pepper, keep the heat low to medium, you don't want it to boil
flour, butter, milk salt n pepper loads of cheeses when sauce is cooked right through
And remember...it might look like it's going lumpy but it's not. Just keep stirring adding more milk as you go.
Don't add too much milk at one time, that will stop it going lumpy.

Can't I use elmleigh and grated cheese

If you cannot be bothered with the whole roux thing cheat and thicken with cornflour slaked in milk!
you can use what you like :-) i expect it will be very heavy & rich though, i love cheese sauces but the thought of that is too much for me. try it, let us know what its like
Use whichever cheese suits your taste
I don't know if Elmlea freezes well?
could you buy a good cheese mix - I have used them for my lasagne but I did add extra cheese - it was good.
Vak....I don't think it does.

what is elm leigh?
Long life cream.

It is a proprietary brand of alternative to cream made with buttermilk and veg oils.
eerrgghh don't use cream!
Jennyjoan - Bisto does cheese sauce granules! On their own they make a terrible sauce, but if your roux and sauce goes a bit runny a spoonful is good to thicken it. Don't tell everyone.:)
