When To Blind Bake ?

I want to make a sweet and a savoury pie soon as a change for sunday roast.

I will buy the shortcrust pastry and then use probably chicken, ham and leek with a jar of homepride white wine and cream sauce.

Would I need to blind bake....the pie will be fairly deep, around 3" ?

i usually give the pastry case a head start for about 20 mins then fill ...avoids soggy bottom !

We were always taught at school to put pies and pastry goods on to a hot baking sheet to cook, this makes sure the bottom has lots of heat so the pastry cooks thoroughly
depends on the oven British ovens tend to have side or back heat so you need to blind bake if it's a continental type of oven they have bottom heat which negates the need for blind baking
