In this article, it states;
"Stinking Bishop is said to be derived from a cheese once made by Cistercian monks in the village of Dymock.......its potent smell was the result of washing the rind in a pear cider."
Pear cider ? Cider is made from apples.
Surely they mean perry? Or do they think we wouldn't understand if they said this?

In the U.S. cider can be made from pears as well as peaches or it can be made from apples but with pear juice added... I see in the above site that a variety of pears called perry is often used...
In the uk, generally a drink made in the same way as cider, but from pears is called a perry. I suspect some "gastro speak" here like calling gravy a "jus"
UK cider is always alcoholic (sometimes very!) my recall of the cider sold in New jersey 12 years ago was that it was non or low alcoholic, basically the apple juice unfermented.
