Devilled Kidneys

I would like to try preparing this dish for a Sunday breakfast.
I'm told that I should get lamb's kidneys but will the butcher
remove the white core or would it be cheeky to ask?

Not at all, any good butcher would do that for you. When I buy beef skirt for a casserole mine always cubes it up for me.
