Do you have a family tradition for this meal or is it anything for ease and simplicity before the following days excesses?
We have something quick, simple and easy...pizza and salad this year...before we clear everything away, put the Christmas CD on and get stuck into a few drinks while peeling the veg and preparing the turkey etc. for Christmas Dinner.
I am doing roast beef - definitely think Turkey no matter how you cook it - is always a little dry. Sista's and my appetite has diminished a little. so we dont eat too much.
Smoked pork sausages (Mattesons type) cut into thick chunks,cooked in cider with onions, can of chopped toms,chilli powder ,canneloni and red kidney beans.

Never had a dry turkey in this house. A pack of softened butter smeared under the skin and lots of streaky rashers laid over the top, a lemon and orange in the cavity and a foil tent over it.

The way I do Christmas Turkey is definiteley not dry. My eldest son (33yrs old) always hated Turkey because of it's dryness. I pinched a recipe from Phil Vickery several years back and it is the most succulent and quicker way to cook Turkey. It ends up cooking in it's own gravy as well so no extra work.

Always roast a Turkey upside down, with the breast at the bottom.
That way all the juices flow into the breast and keep it moist.No need for butter, bacon or basting. Try it you will never cook a turkey any other way again.

It is a recipe from wife's scrap book when she was a student nurse in residence 40 years ago . Would you like me to type the amounts and method. It really is a simple winter warmer recipe. We do it every Christmas eve.
