175g long grain rice
2 hard boiled eggs
75g butter
salt
cayenne pepper
chopped parsley
Cook and flake the fish.Cook the rice in the usual way and drain if neccessary. Shell the eggs, chop one and slice the other into rings. Melt the butter in a saucepan, add the fish,rice,chopped egg,salt and cayenne and stir over a moderate heat for about 5 mins, until hot. Pile it on a hot dish and garnish with lines of chopped parsley and sliced egg.
Get some smoked haddock, and some egg fried rice from your local chinese takeaway, cook the haddock then flake it into the rice...then either cut up a few boiled eggs and mix them in OR (my own personal favourite) stick the rice and haddock mix in a frying pan, get it hot and crack an egg or two into the pan, mix it up and when the egg is cooked, serve...absolutely delish!
One of the easiest things to make, rice, smoked fish, egg and whatever else takes your fancy!
