Whilst meandering round sainsburys I came across recipes for two salads which really appealed so I bought the ingredients and we've had both this week...a chicken and mango one with Singapore noodles, and a prawn and pomegranate one. Both were totally delicious, and very quick and easy to make.
This evening I'm going to make some Brocollislaw, and some coleslaw with fresh mango in for added taste and interest, to have with our ribeye steaks.
These sorts of salads make such a change from the usual lettuce, etc., and means we get a whole variety of different fruit/veg with no cooking.Anyone have any favourite salads they'd like to inspire me with?
Oh yes, thanks for reminding me of Waldorf salad, Viv. I'm not over keen on walnuts but the rest of it I really enjoy. Hmm, think I'll make one next week with more peanuts and less walnuts, and probably a few green grapes.
The prawn and pomegranate was himselfs favourite, the chicken and mango mine, but both were really tasty.
I've made the Brocollislaw...try that Viv, if you like something a bit different, it's got lots of nice textures and crunch...and am just about to make the coleslaw.
Forgot about that one too, Sharon. Fresh tuna is on my list for next week so will give nicoise a go too. We enjoyed some swordfish steaks a week or so back and am keen to find a tasty salad that uses it, I suppose I could substitute it in any salad really.
I usually do mixed salads for work....some strips of left over roast chicken, hard boiled egg, iceberg lettuce, halved cherry tomatoes, thin sliced red onions, thin sliced peppers, halved grapes and maybe some pomegranite seeds.
I always put some kind of fruit whether it's grapes, tin of mandarin oranges, thinly sliced pineapple. I also sometimes add cold rice, cous cous or pasta
