Moussaka Aubergine Substitute

I love moussaka but son hates aubergines. About the only veg he doesn't like. . What could I substitute it with to make him a separate portion?

Maybe courgette?
large mushrooms?
I think courgettes would get too "watery" in a moussaka. I've used thickly sliced mushrooms in the past - with good results.
Slices of par boiled potato
Gingejbee - yes you are probably right. Mushrooms would be much better

Ahh I think courgette will probably be too much like aubergine but good idea though. Hadn't thought of mushrooms or potatoes tho!

So when an American recipe says one cup how much do they mean?
Usually 250ml by volume...don't know about weight.
I found that asparagus go's well.

I often use potato instead of aubergine.
I'm amazed one can tell it is aubergine in a Moussaka what with all the lamb, tomatoes, herbs and spices. Is it really the flavour, or the texture ? Maybe if it were chopped finely ?
