...thickening up in the fridge?
I opened a container yesterday, and this morning it is thick enough to stand a spoon in. This has been happening a lot recently.
My fridge is cold...and the cream tastes fine otherwise.

Perhaps your fridge is so cold the molecules are running around to keep warm and effectively whipping your cream :-)

I like it too...

Too cold may be it, as there seems to be a fine line between too warm and too cold in my aging fridge.
and, therefore, it's burning too much tricity..... very few people adjust their fridges or conversely their hot water temperatures to the season.

^^^ah...so I am not alone!
I do as the last poster, just whizz it like crazy with my handheld frother.
I shall also turn the temp down a notch.
The fat in the cream gets thicker (more viscous) the colder it gets.
It is normal for cream to get thicker as it gets colder. Just take it out 1/2 an hour before you use it and give it a quick stir before use, it will be back to normal .
