I've never cooked it before - I have a 3lbs joint. Would it cook well in a slow cooker and would I add anything to it?

Then I remove the meat and press between two plates with a weight on top.
When the stock is cold, skim off the fat - you can then make a gravy or here in the North we add 'Pot herbs' ( a good mix of veg) to make a broth.
