Leftover Roast Chicken

I've got quite a bit leftover from a roast dinner - and it's more in slices rather than chunks. Any ideas apart from chicken sandwiches? X

Basically a chicken sandwich :)
I prefer to think of it as "a cross cultural fusion of ingredients ... innabun"
I'd go for a nicely spicy Asian broth soup with noodles, veg of choice and slivers of chicken.
I'd do a stir fry with noodles and a chilli sauce.

I wish I still had a Morrisons near me. I'd love to try that curry sauce.
Rissoles! As a child in the 50s mum used to always make rissoles on a Monday or Tuesday with leftover meat from Sunday roast and I still make them today with any leftovers.
Its so simple and very tasty, finely chopped onion, mince the meat in an old fashioned mincer or a blender, a sprinkle of dried herbs, a spoonful of Bouillon stock powder and S&P, add about half a whisked egg to bind it all together, not too much as it will be too wet, (if you feel the mixture is too wet add a little flour), place in the fridge for an hour or so then mould the mixture into 'patties' and fry gently until golden brown and crisp, about 12 minutes each side, turning regularly, serve with either a salad, or mash and veg with gravy, enjoy!!
I'd just have chicken sandwiches. I love chicken sandwiches.
Chicken croquettes
Mince the chicken with a few capers. Mix in with a parsley sauce (quite thick), roll in egg and then breadcrumbs, then fry.

Coronation chicken pasta salad; with pickles etc as a ploughmans; mince it up and bind it with breadcrumbs to make meatballs / kofta.
How about a nice chicken salad? You can put allsorts on a salad and don't have to reheat the chicken ...

3 weeks ago, I had salmonella from a well-cooked chicken from M&S and the label (in theory given their chicken distrib centre in Birmingham) 4 days in date.

How to lose weight very quickly.

Now it's a major attack of gout in the upper of the foot and the ankle sides, a consequence (risk) of going on Allopurinol as it dumps out the excess uric acid. Am really struggling to walk - driving is ok as that is on the balls of the toes and the toes themselves. Been to the quack and on a pharmacy of pills....

Thanks Eccles - in short, I would be very wary of eating any cooked chicken at the moment, especially cold.
DT...going by your other thread regarding the chicken it sounds as if you have self diagnosed yourself.
Always....chicken curry as that's what I do!
Your GP confirmed it as salmonella then DTC?

Very nasty and takes a good while to recover from.

I'd make chicken sandwiches too, I just love chicken sandwiches, lots of salt and a bit of mayo, yum.
Or coronation chicken.
I'm with those who dislike cooking with pre cooked meat, it goes all shredded and loses its texture. Yuk.

Had a chicken sandwich for lunch and then made a chicken curry - was very nice. Will keep all other meal suggestions for in future so thankyou everyone!
And hope you're feeling better DTC - a very drastic diet indeed!
