anyone have a recipe that they can recommend from experience?

I use regular pancake mix and add 2+half tsp baking powder and 1tsp castor sugar
Also use less milk so that the batter is thicker.
Always use this one....never fails.

Gingejbee, I just use "Aunt Jemima's Pancake Mix", it's a lot easier and makes great pancakes.
Must say that we're not into packet mixes for anything!

I make these a lot

1 cup plain flour (self raising if you want extra fluffy)
1tsp baking powder
1 large egg
1 cup milk

Mix in jug. Pour into circles in hot, non stick pan. Cook until goes bubbly on top, turn over and cook for about 30 seconds.
Just to add. Cup is the American cup measurement
Canadian Pancakes (much better than American of course lol)

1 cup self raising flour + 1 rounded teaspoon of baking powder
3/4 cup milk
3 large eggs
pinch of salt

Beat eggs and milk, add flour/baking powder/salt
beat lightly until smooth. It will be much thicker than English pancake mix.

heat oiled pan add dollops about 3 inch in diameter, flip when bubbles appear on surface, keep warm in oven until all are cooked

serve with streaky bacon drowned in Maple syrup.
What is an American cup measure?

i bought one of those silicone pancake flipping things and used the bbc recipe and they were good

although i also put a mix on my next shopping order so i'll be able to tell you what's better

I made these again today. I find it puzzling the recipe does not tell you how to cook them! I'm sensible so I kind of know you make them by following the mix into a frying pan but then it says they take half an hour to cook!
