For a number of reasons I have a lot of cooked chicken. We’ve had it many ways to use it up and have been getting a bit sick of it.
Brainwave this morning, Ive coronationed it to have with a jacked potato this evening, and had forgotten just how much we both enjoy it.
I usually put currants or sultanas in it but only had a few currants from 2019 which looked a bit iffy so didn’t bother. Apparently the original recipe didn’t have either in, just a few chopped apricots.
Mayo, cider vinegar, mango chutney, hot curry powder, cumin. Dead easy and very tasty.
Tonight we have duck breasts, dauphinois potatoes (with added spinach, just because) and some mixed greens (tenderstem broccoli, asparagus, green beans, savoy cabbage)
I was going to make a fruit sauce but we're having a fruit sauce tomorrow to go with our venison so I might just use a chilli jam.
Might chop up a pointy pepper, some celery, cucumber, cherry tomatoes and red grapes, if I can be bothered.
Cooking really takes it out of me these days for some reason. I love eating tasty food but sometimes just the thought of having to make yet another meal makes me want to go to bed :(
Chilli jam with duck would be great, a lovely combination.
Sometimes it does become tedious. Deciding what to cook everyday and then constantly doing clean ups.
I love fruit and salad. I had that last night with new potatoes and thinly sliced chicken. I'm definitely going to put coronation chicken on my list (I'm trying to run my freezer down) I can see a lot of fish being on the menu soon.
I’m fasting at the moment, every third day. But Coronation Chicken is something that would sorely tempt me. We’ve been having smoked salmon and hard boiled egg salad of late. Very nice indeed.
