Ideas for meals for hot evenings?? Apart from salad lol. What do we all eat??

Pizza, Quiché & barbecues, and that's just for starters
My fridge is full of various cheeses and meat...salami, several types of ham, mini sausages from M and S. There's usually either frittata...I made minis yesterday,...or egg mayo. If I slow cook some chicken thighs, I eat them cold with mayo. Also olives, baby beetroot, pate.
As for cooked food, either pan fried fish or omelette. Add baby tomatoes or avocado to any combination of the above, and I'm a happy bunny.
This week we’ve had quiche, pasties, scrambled eggs, and tonight chicken thighs.
I made a big bowl of coleslaw, I make a variety of salads (sometimes with lettuce, sometimes not) a bag of pea shoots, and have some mixed beans in vinaigrette in the fridge. I have some potatoes ready to boil and turn into potato salad tonight. I also have various flavours of croutons.
Scrambled eggs are done in the microwave so there’s no heat from the hob. Quiche and pasties were warmed up in the fan oven part of the microwave, the chicken thighs will also be cooked in it for tonight.
I refuse to ‘cook’ as such when it’s sooooo hot and have found by varying the salad type accompaniment it doesn’t get boring.
I also have chilli and curry in the freezer if we fancy them, served with Veetee microwave rice, so again, no hot hob.
I do my frittata in the Airfyer...whether full size or mini, they only take minutes and no heat generated.

Too true YMF. Last night I cooked my version of a chicken Jalfrezi/Vindaloo. I expect tonight my wife will make a Greek salad.
I’m pushing the boat out tomorrow and Saturday, regardless of the heat.
Tomorrow will be salmon fillets, baby potatoes and peas.
Saturday will be belly pork with a broccoli and cauliflower bake, and homemade apple sauce.
I always enjoy any kind of salad but sometimes just fancy a change.
Grapes, strawberries and blueberries washed down with chocolate milk.
Not exciting, nor sophisticated, but just what I love in hot weather.
Last couple of days, M&S whole cooked chicken, mixed salad with honey & mustard dressing, buttered tiger roll.
Fresh strawberries for after.
Southern fried chicken with home made salad of mayo garlic, onion leek and other stuff... I unashamedly wolfed it down.
To hel*l with the food! just open a bottle of wine.

Please believe me when I say you don't want to know what his delicacies are :-/
Pasta 09.22 - the contents of your fridge sound delicious but if - as I believe - you live on your own - how do yo manage to keep such a wide variety ? Or do you shop frequently. I am dependent on supermarket deliveries and have to judge how much I buy at a time. X

Well, yes Arky...and yellow mustard.

Rosie...I take myself into the city centre several times a week and as I don't drive, get only what I can carry comfortably. It gets me out... ;) I try to rotate things so that I only buy new as I'm finishing things. Sometimes there's a lot less in the fridge like in the winter...but then I batch cook a bit more.
Yes, it would be a lot different if I relied on weekly deliveries.
Tilly, a bit of course black pepper on hot dogs for me. I wish yo well on yellow mustard, Xx
