Stuffed Marrow Recipes

Hi, some of my courgettes have grown to marrow size, any good recipes you have to share please.

Cut marrow in half longitudinally. Boil for 5 minutes and scoop out the centre. Grease an oven dish with fat. Lay two large sliced onions and eight sliced potatoes at the bottom of the dish
8oz minced pork
4oz bacon
1 tablespoon of Tomato paste
2 large onions
2oz butter
salt and pepper
1 teaspoon of curry powder
1 teaspoon mixed spice
In a pan brown the chopped onions in the butter, add the minced pork and the chopped bacon and simmer for 5 minutes. Add the scooped marrow, tomato paste, salt and pepper and the spices. Fill the marrow halves with the meat mixture and bake in a moderate oven for about 1 hour
You can use beef mince. We microwave the marrow on High for several minutes instead of boiling depending on size. We also add a little more curry powder ad mixed spice.

in a pan fry onions, garlic,some mince and the the flesh and season, we also like to add cooked rice a bit of spice added is nice.
add the stuffing to both sides of the empty marrow and and wrap tightly in foil and bake - squeeze to check the give and then unwrap and crisp up for the last 30 minutes.

I usually cut mine into 1cm rings, peel them, scoop out the centres and then fill each one with the stuffing, pushing it down flat. I use my favourite sausage meat mixed with chopped onions, chopped mushrooms and chopped tomatoes (fresh not tinned) then pop them on a tray and oven cook them. By doing that they cook much quicker and the stuffing browns too, which I prefer.
