Wedding Cakes.

My daughter has asked us to make her wedding cake and suggested having one of the tiers as a cherry cake instead of the traditional version.Does anyone have any idea how long the cherry/sponge would stay fresh AFTER it has been iced etc. to match the other tiers? any help would be appreciated,thanks.

CHERRY ALMOND CAKE
8oz flour; 4oz ground almonds; 1/2 teaspoon baking powder; 4oz cherries (more if desired!); 8oz caster sugar; almond essence; 8oz butter or margarine; granulated sugar; 3 eggs; salt
Heat the oven to140 degrees C or Gas Mark 1
Cream the butter and the caster sugar. Add the eggs and a little flour, baking powder and a pinch of salt. Add the ground almonds and sieve the remaining flour. Add the cherries and almond essence then sprinke the top with a little granulated sugar. Bake in an 8 in ch round cake tin (greased) for 2 1/2 hours. This cake improves with keeping.
