4oz plain flour
1/2 pint milk
1 egg
Sift the flour (twice if you can be bothered; add a pinch of salt/pepper if you want) into a bowl; make a well in the middle, break an egg in the well. Mix with a fork - you will get a stodgy mess. Gradually add the milk a little at a time, beating out all the lumps (a whisk is good for this). Get as much air in the mix as you can. Put in the fridge for half an hour.
When making the pancakes, make sure the oil/fat is very hot (test with a little mixture - it should form a solid v quickly). Use approx half a cup of mixture for each pancake - swirl mixture around to cover base of the frying pan. When edges begin to go brown, use palette knife or similar to loosen the pancake then either flip it over with the knife or toss it to brown the other side.
Serve straight from the pan with lemon juice and sugar, or strawberies and cream, or sausage and beans or whatever.
