does anyone know how to make or purchase the cheese dip that accompanies nachos when purchased in the cinema. I have tried to make it at home but the texture is all wrong and it starts to solidify on cooling. Hope you can help. Many thanks

Hi Christine,
is it not just cheese sauce mix? you know the type, Colmans packeted cheese sauce- just add milk/water, or shops own in a sachet thing. Tastes the same to me. I know it's a synthetic tasting cheese rather than something you could make youself with proper cheese and flour etc. It's lovely though - despite being obviously made out of rubbish.
Best nacho dip is a jar of salsa put into a shallow bowl then cover this with a layer of cream cheese (philadelphia type). Sprinkle this with grated cheddar. When you dip the salsa mixes with the philly and cheese - it looks a mess but tastes delicious!
Use the standard cheddar cheese packet sauce but don't put quite as much liquid in, also to this mix add a pinch of sugar, a pinch of salt and a pinch of paprika or cayenne pepper if you like a bit of spice! Voila, thermonuclear cinema nacho sauce!
