OK, try this potato pastry recipe and substitute the potato with roasted butternut squash:


1 cup (110 g) self-raising flour
2 oz (50 g) potatoes, peeled, cooked and riced - use the roasted squash in place if preferred.
1 level tsp salt
1/3 cup (75 g) butter
cold water to bind

1. Mix all dry ingredients together and rub in the butter.

2. Add sufficient water to bind, cover with cling film and allow to stand for at least 45 minutes.

3. Roll out and use for all pies, flans and quiches.

Substitute the squash or try with sweet potato, cassava, yam etc. This is a handy site for lots of recipe ideas and is certainly one of the better ones available to recommend.


Make sure the veg is riced - if you haven't got a ricer in the house, cream the veg really really smoothly or pass through a fine sieve. This has the effect of altering the starch molecules so it will mix well with the ingredients.
