caramelised onions

has anyone got a recipe for these.I can,t find any to buy in my local supermarkets,but the owner of small italian shop told me easy to do yourself,but I can,t remember his instructions thanks

For more on marking an answer as the "Best Answer", please visit our FAQ.I caramalise onions as well as apple and oranges buy simply putting some caster or normal sugar into a frying pan and allowing it to heat up so the sugar melts and becomes caramel. Fry the onions in this caramel.
Some people add a bit of water to the mix and put the onions in allowing the mix to reduce down.
Others may do it differently though
I use whole shallots.
Peel carefully to keep whole. Boil in a saucepan in salted water for 8 minutes. Drain really well.
Into another saucepan heat 2 oz butter and 1tbs sugar.
Put shallots into hot butter, put the lid on and continue to cook, shaking gently occasionally.
If the shallots don't seem to be caramelising, add more sugar.
When you believe them to be cooked - cook for another five minutes.
