What is your favourite type of soup?


My Favourite is one I just made several minutes ago, it's a delicious pea and pancetta soup, which is from the Novelli academy, it's fantastic!


I think I might go and check on it now....

A little unsalted butter,


1 small onion,


60g pancetta, chopped


450g fresh or frozen peas,


1 garlic clove, roughly chopped


800ml light chicken stock,


1 sprig of mint,


freshly ground salt and pepper,


pinch of caster sugar.


1) Heat a lttle butter in a large pan, add the onion and sweat till translucent.


2) Get a frying pan very hot, add the pancetta and fry quickly until crisp.


3) Add the pancetta to the large pan, together with garlic and peas, and cook for a few minutes.


4) Pour in the stock and bring to a simmer. Cook until soft to the touch. Add the mint, season and add sugar.


5) Blend until smooth, then put through a fine sieve and serve hot.


P.S Sorry If I spelt anything wrong, as I just got home from cooking for 320 people in the restaurant I work at!

Taco Soup

1 Pound of Hamburger (I think you guys call it minced beef) � Browned & Drained

1 Pack Taco Seasoning

1 Can Rotel Tomatoes (has jalapeno peppers in it)

1 Can Dark Red Kidney Beans

1 Can Corn � Whole Kernel

1 Can of Water

Mix together & cook until it looks done.


After you put it in your bowl � taste it, it is great that way and less fattening � then put a big blob of sour cream in it and mix it up � then taste it again.

Garnish with black olives, cheese, onions, chives � whatever makes you happy.

I double the recipe and freeze it so I can just microwave a container when I want soup. It is way better than it sounds.
