What is the difference between single cream and double cream apart from the obvious thickness and the fact that they are spelt differently ?

I'm sure that double cream has twice the amount of fat as single cream.....i stand to be corrected though.
It's the water content. If you add enough water to double cream to make double the quantity you end up with single cream.

and one 'whips' better than the other. they had this question on ready steady cook the other day. there were a few differences but nothing major. you can use both in cooking and over desserts or in coffee etc..

It is primarily due to legal minum of fat content : single cream @ 18% - whipping cream @ 35% - double cream @ 48% - clotted cream @ 55%
