When done, stuff the mix back into the hollow aubergine half, sprinkle with cheese and bake in the oven for about 20mins. Serve with rice...delish!
Beef & Noodle Bake
450g Lean minced beef, 1 medium onion (chopped), 2 garlic cloves (chopped), 1 green pepper (seeded and chopped), 227g can tomatoes, 1 vegetable stock cube, 175g medium egg noodles, 275g fresh soured cream, 225g cottage cheese, 50g Double Gloucester cheese.
Dry fry mince until brown. Add vegetables and stock cube, bring to the boil and simmer for 15 mins, stir occasionally. Spoon into an overproof dish. Meanwhile cook noodles as label directs and drain. Mix soured cream and cottage cheese together, then stir in noodles. arrange noodles over meat and sprinkle cheese over the top. Cook at 180C (350F) Mark 4 for 45 minutes.
Don't be put off by the cottage cheese etc I don't like it much either but this dish is delicious.........
