I use lamb shanks or boned shoulder.
Brown meat and put in pot.
Fry onions, garlic and carrots and leeks 3 mins and put in pot.
Cut tatties up small, i use new pots and put in pot. top with 1/2 the stock and all the herbs...
In the pan you've used to brown meat and onions etc, pour in rest of stock and red wine and bubble for a couple of mins before putting in the pot....
and then i shred the cabbage finely and add that...
I cook on high for a 4 hours then switch to low for 3 hours....
