I think the best way is in orange juice and either brown sugar or honey. Wrecks the dish as the sugars 'set' round the edge but the flavour is great
Hi Sponsmith - you should find they won't stick if you oil the foil thoroughly. You could give them a turn half way through - depends though if you leave them for too long, the natural sugars in the carrot will caramalise and this will certainly stick.
Plain roasted only need 15 - 20 mins as suggested by ethel but a honey roasts version can take 40 mins without spoiling. If you do them in orange juice and honey, use a glass or ceramic casserole dish, but this is more of a baked variety - and as I noted the sugars will burn to the dish as the juice evoporates as part of the cooking process, but you do get a really good, sweet flavoured veg from it - just get someone else to do the washing up....
Incidentally if you roast veg often, try some non stick spray for the tin - or use a non stick baking paper - or of course just do them in a non stick tin..
