how long can you cook double cream for?

Im looking at recipes for curries that take a very long time to cook, i.e ones suitable for a slow cooker. half of the recipes are tomato based, and the other half are cream based (as you would expect). Are recipes with double cream in suitable for cooking for hours on end? what happens if you cook double cream for ages?

I've never suffered at all from double cream problems when oven cooking or hob-boiling so I imagine a slow cooker would be the same. I usually simmer a korma for round about an hour and the cream never does anything untoward in that time.

For a change you could use coconut milk, you can cook that for ages
