I am making a large sponge cake at the weekend for my grandsons christening cake. When ever I make a smaller sponge it comes out very light and fluffy but one I make it thid size it is usually not so nice and sometimes a bit stodgy. how can I make it just as nice as a smaller one, what what am I doing wrong? my husband keeps saying he would like them like the shop bought sponges. can anyone help me please. many thanks
You could always make two smaller cakes and put them together. If they are being covered in icing then it won't matter - nobody will even know and you will have light fluffy cake.
