Artichokes

Anyone got any nice and simple (vegetarian) recipes using artichokes? I've recently discovered just how lovely they are! I've had them in a pasta dish and it was really nice so any ideas like this (rather than just using them as a vegetable) would be great.

Have fun - oh and watch out if its the Jerusalem version if you have guests - can get a bit windy...
