How can I make salmon fillets taste more exciting? we're also eating healthy.
Help, when ever we do them they taste so bland

4 salmon steaks (or filet large enough for four people, adjust as necessary)
One fourth cup prepared mustard
1 lemon
4 tabelspoons Worcestershire
Kosher Salt
Fresh Ground Black Pepper
one half pound flaked or shredded crab meat Extra virgin olive oil
On a grill or broiler, cook steaks or filets about 3 minutes per side after brushing with EVO, a little mustard, salt and pepper to taste.
Mix mustard, Worcestershire, juice from the lemon, and mix in crab meat.
Place spoon fulls of crab meat to thoroughly cover each steak or filet. Continue broiling or grilling for another 6 or 7 minutes.

Depends really on your salmon....wild salmon doesn't really need much tarting up.
My brother cooks the whole salmon stuffed with apricots and sultanas... baked in the oven.
I love this one (by AWT) even without the fish sauce it tastes good. We either flake it into a salad, serve with cous cous, or use as a sandwich filling.
Ingredients:
small bunch of coriander, washed
12 mint leaves, washed
� tsp of salt
2 garlic cloves, crushed
2 green chillies, de-seeded and chopped
3 tbsp fresh lime juice
1 tbsp golden caster sugar
1 tsp peeled and chopped ginger
1 tbsp fish sauce (nam pla)
4 x 125g/4�oz salmon fillets
Method
1. In a food processor blend together the coriander leaves and stalks, mint leaves, salt, garlic and chillies to make a rough paste. Add the lime juice, caster sugar, ginger and fish sauce and process until fairly smooth.
2. Spoon the sauce into a heat-proof bowl and combine with the salmon, then marinate for 20 minutes.
3. Boil some water in the bottom half of a steamer.
4. Place the bowl with the marinated salmon on top and steam for 6-8 minutes.

1. Put salmon in a baking tray with juice of half a lemon, some olive oil, some crushed garlic & a tablespoon or two of cumin, roast at 180 degrees until fish is cooked but tender
2. Marinade for 30 � 60 minutes in some teriyaki sauce, then grill & serve with stir fried veg (I tend not to use a sauce as, just mix with some garlic, ginger, chilli, soy sauce & lime juice) & rice
3. Steam with some chopped ginger on top, serve with pesto pasta

Goes best with simple flavours - mustard butter; cream and prawns on a bed of leeks; soy glaze; fennel puree etc. You should taste the fish above the other stuff - and accompany with some simple fresh salad leaves for example.
BBQ is good way to cook as well.
If you want to get all dressed up, serve on a 'ring' of seasoned couscous, with a puree of peas and/or red peppers or spinach for example and the fish on top of that, and a few nice fresh herbs on top with a balsamic reduction dribbled round the edge... - simple and very attractive.
