Haloumi cheese

Just discovered this little gem. I find it a bit salty to eat on its own but have used it in a mixed kabab and it tastes particularly nice when it's next to a chunk of pineapple on the skewer.
Any other suggestion on what i can do with it ?

In a pan fry about a dozen shallots,a red and green pepper and a leek all roughly chopped. Add a small pack of cherry toms and a pack of cubed haloumi . Transfer to a casserole dish. Boil and skin a couple of sweet potatoes and about a pound of new potatoes ...cut into chunks ..chuck in.
Add a handful of olives ..black and green..small jar pesto and a couple of teaspoonfuls of minced chillis.Pour a half a pint of vegetable stock over it and cook in the oven 200c for about forty minutes..
Sorry it's a bit vague .re measurements..I had it written down somewhere ....make it up as you go along!

Roasted Peppers with Halloumi and Feta Cheese
2 large red peppers seeded and roughly quartered
6 ripe plum tomatoes halved
3 tbsp extra virgin olive oil
handful fresh basil leaves
200g (7oz) halloumi cheese thickly sliced
200g (7oz) feta cheese, roughly chopped
Preheat oven to 200 degrees c (180 if using a fan oven), 400F, Gas mark 6.
Spread the peppers & tomatoes out in a large roasting tin and drizzle with the olive oil. Season and sprinkle over half the basil leaves. Roast for 15 mins until veg starts to char.
Remove the tin from the oven and arrange the cheeses over peppers and tomatoes. Roast for 20 mins until cheese turns golden. Sprinkle with the rest of the basil and serve with a green salad and crusty bread if you like.
