Please can anyone recommend a good recipe for
APPLE CAKE � using real apples that has been tried & tested and well worth the cooking?
Have asked Jeeves & Google and although
lots of recipes they won't tell me if they are good!

Apple and Cinnamon Crumble top Cake
For the topping
12oz eating apples peeled and cored
1tablespoon lemon juice
4oz SR flour
1teaspoon cinnamon
3oz butter or marge
3oz demerara sugar
1 tablespoon milk
For the Base
4 oz butter or marge
4 oz castor sugar
2 eggs
5 oz SR flour
preheat the oven 180 C gas mark 4
Chop the apples and mix with the lemon juice.
For the crumble topping sift the flour and cinnamon into a bowl ,rub the fat into the flour, mix until you get a breadcrumb type mixture..stir the sugar in.
For the base
Cream the fat and sugar, gradually beat in the eggs a bit at a time ,sift the flour and fold it into the mixture
Spoon the mixture into a cake tin (8" )square or round(don'tt forget to grease and line the tin).Spoon the apples on top.Stir the tablespoon of milk into the crumble mixture and scatter over the top
Bake for 1 to one and a half hours.Will be cooked when a clean knitting needle inserted into cake comes out clean !
Serve cold with whipped cream.Makes about eight slices.

this is the best! my mom always made for christmas. You need a struesel pan. Ingredients are as follows. 6-8 tart apples, peeled and thin sliced mixed with 4 tsp of cinnamon and 10 Tblesp of sugar. mix and set this to the side. Then mix 3 C of regular flour, 3 tsp of baking powder, 2 C of sugar, 1 C of oil, 4 unbeaten eggs, 1 tsp of salt, 1/3 C of orange juice and 2 tsp of vanilla. Directions: preheat oven at 350. beat together on high all of the ingredients above (except for the apple mixture)until well blended. Grease and flour pan then pour as follows: 1/2 batter, 1/2apples until all is gone. Bake on Bottom rack of oven for 1hr and 45 min. Check at 1-1/2 hours. depending on your altitude it may get done quicker. when cake is done turn out on to a plate. This recipe is awesome and I'll promise you that you will enjoy this.
