i have made icecream in an ancient electric auto paddle contraption in the freezer. Using full cream, egg yolks sweetner (for a diabetic) and vanilla pod.
Warming egg yolks and stirring in to warm cream is challenging enough unless you want rich scrambled eggs I found (should I have used whites too?)
Having chilled the machine till the paddles lifted I poured in the cooled mix and set to stir/chill till set. Apx 90 mins.
Tasted good but next day was so hard impossible to cut with anything less than pickaxe.
Is it possible to make some kind of soft(er) scoop by this method? If so how ? PLEASE.
