food for celiacs

hi does anyone have any recipies for celiacs as we are haveing a lady come to the care home i work and cook for ,i am trying to find some interesting menues many thanks

I will say that unless you make your stock from scratch, please use KALLO stock cubes if you dont. They are gluten free, unlike OXO cubes which do contain wheat.
I recommend DOVES FARM FLOURS as they too are gluten free and I still make great cakes with it and I add XANTHAN GUM as a stabiliser.
Bread is a bit of a mare, but you can buy the mixes from the super markets in their gluten free bit, aswell as porridge.
I buy my gluten free muesli for breakfast from the local farm shop.Is she ok with dairy do you know?....

Just to add to Asciwhite's answer ....
Gluten is often hidden away in the strangest places (some Mayonnaise, Brown Sauce, Mustard etc.).
It might be an idea to get a copy of the Coeliac Food and Drink Directory, which lists Gluten Free food by Shop as well as product.

Most supermarkets now have a 'Free From' section where you will find many gluten-free products including loaves and biscuits. Sainsbury and Tesco are probably the best. I pestered Morrisons for some years and they now have a small section for free from foods but they have not yet woken up to realise that it is now known that there are 1 in 100 people who are coeliacs (ie must avoid, for life, gluten) I was diagnosed 26 years ago when it was said that 1 in 1000 people were affected.
