Hi, does anyone have a recipe for cooking duck breasts in a casserole in the oven, rather than roasting or frying them? Years ago Sainsbury's used to make a jar of orange sauce in which you could cook skinless duck breasts, and it was really nice, but apparently sales were poor and they stopped doing it. I've never found anyone else who does a cook-in sauce for duck, and I'd be happy to make my own, but I can't find any recipes in all my cupboards full of cook books or on the web.

For more on marking an answer as the "Best Answer", please visit our FAQ.2 boneless skinless duck breasts cut into bite size pieces, pur i tablespoon olive oil into a pan over a medium high heat. When very hot stir fry the duck strips for 1-2 minutes until seared all over. Remove with slotted spoon and set aside. add 2 finely chopped rashers of streaky bacon and 1 chopped shallot into the pan and cook for 4-5 minutes until onion has softened. add 50ml red wine and bubble for 1 min. add250 ml fresh chicken stock and simmer 1-2 mins. add 175gr fresh or frozen peas and simmer 2-3 mins. mix together 1 tbsp butter and 1tbsp plain flour together then wisk into sauce until thickened, season, return duck and heat through. serve with mash or jersey royals.
