Breadmaking in a bread machine

I've been using a bread machine for about four years now. Recently the loaves have started to collapse at the end of baking and/or sometimes the white flour part of the mix hasn't blended at all and is crusted on the loaf.

Is there a lack/excess of an ingredient which causes this? Like too much yeast, too much milk powder...etc
I follow the recipe and procedure very carefully.

If you haven't changed your recipes, I would suspect the breadmaker. For example, perhaps the controller has gone wrong, and you aren't getting the right rising conditions (not saying it is that, just an example).
This used to happen to me whenever I'd forgotten to put the paddle back on the spindle after washing it. I'd be surprised if you hadn't noticed that, though. Perhaps the paddle isn't turning properly for some reason?

Thanks for your help. I'll check the paddle...it's an intermittent problem so that could be the problem.

If the ingredients aren't getting mixed properly, you're not going to get very good results. The mixing problem could be:-

* Paddle not seated properly
* Water in the kneader mounting shaft (do you immerse the pan in water ?)
* Dough in the kneader mounting shaft (this happens after extended use - check your operating instructions)

Mine is a Panasonic SD-253 and the booklet says, "When the kneader mounting shaft does not rotate, it is necessary to replace the kneader mounting shaft unit with a new one - Part No ADA 29A115)".

You say it's an intermittent problem, so it's more likely to be water in the shaft that hasn't dried out. My booklet advises me not to immerse the pan in water.
Our panasonic sd253 has just started doing the exact same thing. After 3 years constant use. I found that Kneading shaft unit has got tight with gunge buildup inside it, so the drive belt slips, so... no mixing! Checked price of new part �28+ ...whoah! Took shaft unit out and gave good soak in hot water, (I know you're not supposed to) it turns easily now! That amount of water won't spoil the mix, you put loads of water in anyway. If it happens again I'll take it apart by carefully popping the seal off the top, then clean the insides. Careful with that fragile (cheap 'n nasty) seal though! Hope this helps. Rob.
