Try this recipe for watermelon and rosewater granita I saw recently. Granita is really refreshing in the summer, and watermelon has a summery taste. It's a very cold pudding, a bit like a sorbet which refreshes the palate beautifully after a meal.
Buy a large fresh watermelon, 450g icing sugar and 2-3 tbsp of rosewater. Peel the melon and chop the flesh, then put it in a processor, until it's pulp. Sieve the sugar over the fruit and whisk. Add two tablespoons of rosewater and mix. Pour the mixture into a shallow tray and place in the freezer. As it freezes, break up the mixture with a fork, until the mixture resembles little crystals. It's then ready to serve.
