Roast lamb leftovers

Got loads of cooked roast leg of lamb left from yesterday....what shall i cook with it for my good lady wife and myself tonight.

Don't really want to do a curry although i could freeze until i'm ready for a curry.

Any suggestions ???

It would be lovely cold with some chunky homemade chips, egg and mustard.

You could flavour it with rosemary and put it with a wholegrain mustard mash and red wine gravy and seasonal green veg but if you had a roast yesterday may be a bit too similar.

You could make it into a pie or casserole/hotpot. Maybe even use it in a ramen style soup with noodles and oriental greens.

Or Saag Gosht, lamb in a spinach sauce, a gorgeous indian dish which you could serve with rice and maybe a lovely fine chopped indian salad.

How does one end up with leftover roast lamb?

There's never any left in our house by Sunday evening.

However, hypothetically - if I we had some left over, it would definitely go into a Lancashire hotpot.

My mum and dad bought us a whole leg of lamb as it was half price. It was so big that i had to take a cleaver to it to get it in the slow cooker.

And as me and the mrs are the only ones that eat it....we've got loads left (although i've just had a cold lamb and salad cream sarnie !!!!!!)
Crispy Lamb Salad is lovely. Cube up the cooked lamb (you can freeze it in a bag at this stage to save for another day.) Make a mix of 1 tablesp butter, 1 tablesp honey, 1 teasp mint sauce and put in microwave until melted together. Get a flat baking tray or tin and lightly oil it, then toss in cubed lamb and evenly coat with the melted mixture. Bake in a very hot oven for around 3 - 5 minutes until lamb is crispy and red hot. Serve on a bed of mixed leaves and drissle herby oil over if desired. (you can leave out the mint sauce if you prefer.) LOVELY
Minced lamb is good made into Shepherds pie .
