Yes; peel it, cut it in half from top to bottom, scrape out the seeds and roast along with the other vegetables, it will be delicious.Enjoy!

Yes I do it too, however, I don't think I would have sweet potato and butternut squash together as they are a bit similar and quite filling too.

I know its too late now, but we don't actually peel ours. The skin is lovely and chewy.
