I ownly own non stick frying pans but whenever I try cooking bubble & squeak I can't seem to get the potatoes to brown and crisp up I've tried using a drop of oil or butter but it still doesn't brown or crisp, am I using the wrong type of pan - should I not use a non-stick pan?

make the bubble and squeak as you would in the pan. When heated and cooked form a patti and placed under hot grill for a few minutes. Should brown off nicely.

do you get the fat smoking hot before you put it in.. I find this works, I would also use a mixture of oil and butter.
Get the pan really hot first...
